Potato Pancakes

Ingredients
3.5 cup Mashed Potatoes 2 tbsp Onions, chopped 2 large Eggs 1 cup Flour, white .5 cup Milk, 1% 1 tsp Salt few grains pepper
Directions
Mix together left-over mashed potatoes, eggs, flour, onions, milk and salt. Spoon into frying pan that has been sprayed with non-stick coating, and heated on medium heat. Brown on one side, turn and brown on other side as with regular pancakes.

Serving Size: makes 12 to 16 pancakes
