Spinach-Pecan Salad

1 10 oz. pkg fresh spinach1 cup chopped scallion greens3 ounces shelled PecansOil and Vinegar Dressing (Red Wine Vinegar best)3 Tablespoons Dijon Mustard1 Tablespoon black pepper3 Hard Boiled eggs
Remove hard stem-ends from spinach, wash, & drain. Line plates or bowls with bed of spinach.
Layer sliced hard-boiled eggs on top; sprinkle with scallions; add pecans.
Mix oil, red wine vinegar, and Dijon together well, and drizzle over salad.
