Spanish Green Beans w/ Eggs

Ingredients
1 and 1/5 cups of fresh chopped green beans (or string beans)1 medium chopped tomato 1 medium chopped white onion1 medium chopped green bell pepper1/4 teaspoon minced garlic (optional)2 medium-large eggs1/2 tablespoon olive oil 1/4 teaspoon Goya Adobo w/ pepper
Directions
- Heat up the pan and add olive oil (medium heat)
- add the onions, sauté and once a bit caramelized add garlic (cover pan)
- After 2 minutes, add chopped tomato and chopped green bell pepper, cover lid again
- After 5 minutes add green beans, cover lid
- Once all veggies have softened (7 mins) add eggs, scramble a bit and cover lid.
- After 3 minutes uncover, toss things around a bit and once eggs are completely cooked the dish is complete.
