Stir-fried carrots with mango and ginger

Ingredients
15-30ml/1-2 tbsp olive oil2-3 garlic cloves, chopped1 onion, chopped25g/1oz fresh root ginger, peeled and chopped5-6 carrots, sliced30-45ml/2-3 tbsp shelled pistachio nuts, roasted1 small firm, ripe mango, peeled and coursley diceda bunch of fresh parsley, finely choppedjuice of half a lemonsalt
Directions
Heat the olive oil in a heavy frying pan or wok. Stir in the garlic, then the onion and ginger. Fry for 1 minute. Add the carrots, tossing them in the pan to make sure that they are mixed with the flavouring ingredients, and cook until they begin to brown.

Add the roasted pistachio nuts, ground cinnamon and gently mix in the diced mango. Sprinkle with the finely chopped fresh coriander, season with salt and pour over the lemon juice. Toss to mix and serve immediately.
