Red Ripe Tomatoes, 2 large whole (3" dia) Cucumber (peeled), 1 large (8-1/4" long) Onions, raw, 1 smallSweet peppers (bell), 1 medium (approx 2-3/4" long, 2-1/2"Olive Oil, 2 tbsp*Balsamic Vinegar, 2 tbsp Salt, 1 tsp Pepper, black, 1 tsp
Chop all vegetables into bite size chunks. Toss oil and vinegar over all vegetables; add salt and pepper, toss again. Refrigerate until ready to eat.
