1 TBSP Olive Oil1 Cup Long Grain Brown Rice2 Cups Beef Broth1 Cup Tomato Sauce1 Cup Chopped Onion1 Red Bell Pepper Chopped2 tsp Chili Powder1 tsp Cumin1/2 tsp Garlic Powder1/2 tsp Kosher Salt
Heat oil in skillet over Med heat. Add onion, bell pepper, and rice. Sautee for about 5 minuted or until veggies are tender and rice is toasted. Add beef broth, tomato sauce, chili powder, cumin, garlic powder and salt. Bring to a boil. Once rice is boiling, cover with a tight lid and cook about 45 minutes or until rice is done.

I used instant rice, so I added the veggies & sauce until the veggies were tender. Then I added the rice until heated. I didn't use the beef broth because I used the instant rice. In doing it this way, 1tsp Cumin was way too much for my taste. Will go with .5 tsp next time. Very good otherwise! - 1/23/13
