Ground Turkey Quinoa Stuffed Peppers

Ingredients
1 lb ground turkey1 C uncooked quinoa6 bell peppers (hollowed out)1 small can tomato paste1 can diced tomato2 cloves minced garlic1 C chopped onion6 oz mozzarella cheeseseasonings as desired
Directions
Preheat oven to 350
Cook quinoa according to package directions
Add olive oil, garlic, onion and the tops of peppers to pan & saute until fragment.
Add ground turkey & brown.
Add diced tomato, tomato paste, cooked quinoa & seasonings & cook until most moisture is gone.
Stuff peppers and top with cheese
Place in greased 8x13 pan and put in preheated oven for 40 minutes.
Enjoy!
