Simple Vegan Pancakes

All-Purpose Flour 1.25 cupRaw Sugar 2 tbspBaking Powder 2 tspCinnamon 0.5 tspSalt 0.5 tspWater 1.25 cupOlive Oil 1 tbsp
1. Sift the flour, sugar, baking powder, cinnamon and salt into a large bowl.
2. Whisk the water and oil together in a small bowl. 3. Make a well in the center of the dry ingredients, and pour in the wet. Stir just until blended; mixture will be lumpy.
4. Heat a lightly oiled griddle over medium-high heat. I have the best results with coconut oil, but you can use whatever oil you like.
5. Drop 1/4 cup scoops of batter onto the griddle, and cook until bubbles form and the edges are dry. Flip, and cook until browned on the other side. Repeat with remaining batter.
Serving Size: Makes 8 pancakes
