1/2 cup dates, packed1 1/2 Tbsp unsweetened shredded coconut1/4 tsp pure vanilla extract1 tsp Torani sugar free caramel syrup1 Tbsp semi sweet chocolate chipspinch salt
1. Place all ingredients, excluding 1 Tbsp of coconut, in a food processor and pulse until smooth.
2. Roll mixture into small balls, you should get about 8, and roll in the remaining coconut. Place balls in the refrigerator prior to serving to harden just a bit if desired.
