Ingredients
sunflower oil 3 tbspMustard seeds 1 tbspgreen chillies 2 small ( diced)curry leaves( chopped) 1 tbspturmeric 1/2 tspCorrainder pd 1 tspgaram masala 1/4 tspcilantro 2 tbspEgg plants 2 medium size choppedsalt to taste
Directions
Heat a wok on medium flame. Put the oil into the wok, when warm, add the mustard seeds and curry leaves, green chillies, turmeric. Now add the chopped eggplants and salt. Put a lid on the wok and let it cook on a low-medium heat for 5 mins. Add the garam masala, corrainder powder and mix it. Replace lid.Let it cook again for ten more minutes or till the egg plant softens up, but still holds shape. Remove the lid add the chopped cilantro and let it cook without lid for 2 more minutes and serve hot.
