2 cups cooked oatmeal, or cook the following and then let cool.1 cup old fashioned oats1 cup almond breeze original, unsweetened1 tbsp raisins1 tbsp walnuts1/4 tsp kosher salt1 cup watercinnamon, nutmeg, splash vanilla2 cups white all purpose flour1 3/4 cup whole wheat flour1/4 cup oil3 tbsp honey2 tsp salt2 tsp yeast1/2 cup warm, not hot, water
put everything in bread machine and turn on to dough cycle only. when done. shape into three loaves and place in greased 7" pans. Let rise until double, or when you poke your finger gently into dough (about half a finger tips worth) the dough does not bounce back.) Bake at 350 for about 25 minutes - until bread registers 200 degrees on an instant read meat thermometer. (or nicely brawn sand sounds hollow when you tap the bottom of the pan - but i can never tell!)
NOTE: 7"are smaller than average, so can be hard to find. you can bake in two 8" loaves if you'd rather just adjust calorie count accordingly i like the smaller size loaf so that i have smaller slices and can eat a "whole" sandwich for the calorie count of one open faced one. :)
