wheat-free carrot cake

Ingredients
1 c. coconut floursweetener to equal 1 c. sugar2 T orange zest1 T ground flax2 T. cinnamon1 t. nutmeg1 t. baking powdersalt4 eggs1/2 c. coconut oil, melted1 c. light sour cream1/2 c. soy milk2 t. vanilla2 c. finely grated carrots1 c. chopped nuts
Directions
combine dry ingredients and mix by hand. Beat eggs, oil, milk and vanilla with mixer. Add to dry ingred. Beat until mixed and add carrots and nuts by hand.
