Pumpkin Turkey Chili

Ingredients
1 Tbsp. vegetable oil1 c. chopped onion1/2 c. green bell pepper, chopped1/2 c. yellow bell pepper, chopped1 clove garlic, minced1 lb. ground turkey1 can (14.5 oz) diced tomatoes2 c. pumpkin Puree1-1/2 Tbsp. chili powder1/2 tsp. ground black pepperdash of salt1/2 c. low-fat shredded cheddar cheese1/2 c. light sour cream
Directions
Heat oil in large skillet over medium heat and saute the onion, peppers, and garlic until tender. Stir in turkey and cook until evenly browned. Pour meat mixture into slow cooker. Mix in tomatoes and pumpkin. Season with chili powder, salt, and pepper. Cover and set on low, and cook for 4-5 hours. Serve topped with cheddar and sour cream. Refrigerate any leftovers.
