Spicy Lentil Soup

Ingredients
2 Tbs. olive oil1 onion, coarsely chopped2 stalks celery, sliced cross-wise2 tsp. garam masal (Indian spice blend)1.5 cups uncooked lentils6 cups vegetable brothSalt & freshly ground black pepper, to taste
Directions
In a large saucepan, heat oil over medium heat and sauté onion and celery until tender, about 10 minutes.

Add garam masala and stir to coat onions.

Add lentils and broth; bring to a boil. Lower heat to simmer; cook, covered until lentils are tender, about 45 minutes.

Season with salt and pepper, and adjust the spices to taste.

Serving Size: Makes 6-8 (1 cup) servings
