Mexican Zucchini

Ingredients
4 zucchinis, diced1 medium onion, diced1 can of sweet yellow corn4 TBS olive oil1 jalapeno, seeded and diced
Directions
Heat the olive oil on medium-high heat in a large pan
Sautee all of the ingredients for 5 minutes, stirring well through the cooking process
Reduce the heat to medium, and cover the pan, simmering for 10 minutes. Stir often.

    My new favourite zucchini dish! I used quite a bit less olive oil, I found there was plenty of moisture from the zucchini to stir fry it....thanks for sharing!! - 5/6/08
