RUB:2 Tablespoons no salt added tomato sauce1 teaspoon red wine vinegar1/2 teaspoon dried rosemary1/2 teaspoon dried oregano1/2 teaspoon paprika1/2 teaspoon salt1/4 teaspoon freshly ground black pepperCHICKEN:1 1/2 lb skinless boneless chicken breasts1 large plum tomato, diced1/2 cup crumbled fat free feta cheese (2 oz)
1. In a small bowl, stir together the tomato sauce, vinegar, rosemary, oregano, paprika, salt and pepper. Rub the mixture onto the chicken breasts and set aside.
2. Preheat the broiler. Broil the chicken 6 inches from the heat, turning once- 6 to 8 minutes per side.
3. Top the chicken with diced tomatoes and feta and broil until feta browns slightly.
4. Serve immediately.
