Cous Cous Stuffed Butternut Squash

Ingredients
2 whole butternut squash125g couscous1 stock cube50g feta50g chorizo4 cherry tomatoes1/2 green bell pepper5 black olives1tbsp fresh mint1 tbsp lemon juice1.5 tbsp olive oil
Directions
1. Preheat the oven to 200C, fan 180C, gas 6. Cut 2 whole butternut squash in half and scoop out the seeds. Cut criss-cross patterns into the flesh, brush with 1/2 tbsp of olive oil and roast for 35-40 mins.
2. Prepare couscous according to pack instructions, adding a stock cube to the boiling water.
3. Chop feta, chorizo, tomatoes, green bell pepper, black olives and mint. Stir into couscous and add 1 tbsp lemon juice and 1 tbsp olive oil.
4. Spoon into the squash and serve with a herb salad.
