Oatmeal Muffins

Ingredients
1 cup Old Fashioned Oatmeal1 cup low fat buttermilk, plain yogurt or sour milk1/2 cup oatbran1/2 cup milled flax seed1/4 cup egg substitute1/8 cup melted coconut oil (or canola)1/4 cup brown sugar 1/4 cup molasses (or agave)1 tsp baking powder1/2 tsp baking soda1 tsp ground cinnamondash of salt
Directions
Soak oatmeal in buttermilk for an hour or over night. Add egg & oil, stir. Add other ingredients & stir just until moistened. Fill sprayed muffin tin 3/4 full. Bake at 400 for 18 minutes.
