Cookies & Cream Protein Pancakes

Ingredients
1/3 c cottage cheese1 scoop (30g) Cookies & Cream protein powder by Now foods1/2 c rolled oats 1 tbsp Hershey's Special Dark unsweetened cocoa powder1/2 tsp vanilla extract1/4 c unsweetened vanilla almond milk1/4 c Da Vinci/Torani sugar free Cookie Dough syrup (if you don't have this, use 1/4 c water)2 tsp powdered egg whites (Just Whites)
Directions
In a blender puree cottage cheese to smooth, creamy consistency. Add in protein powder, oats, vanilla, almond milk, syrup/water, and powdered egg whites and pulse JUST BRIEFLY to combine (do not turn to mush!! you want intact oats for the "cookie" experience).
Preheat skillet to medium heat and with a spoon stir in the cocoa powder to the pancake batter JUST BARELY, giving it a "cookie dough" swirl appearance but *not* fully combining.
Pour batter by approx 1/4 cupfuls onto preheated, nonstick-sprayed skillet and cook for about 1-1 1/2 minutes per side, or until fully cooked. Enjoy!
