Grilled Sweet and Red Potato Salad

Ingredients
2 lg sweet potatoes or yams, par boiled and quartered8 small red potatoes, par boiled8 scallions3T olive oilDressing1/8c. olive oil1/8c. chicken broth1/4c. apple cider vinegar1/8c. balsamic vinegar1 tsp honey (up to 1Tbsp if you like it sweeter)1/2 Tbsp dijon mustardsalt and pepper to taste
Directions
Heat grill. Coat sweet potatoes, potatoes, and scallions lightly with olive oil. Place sweet potatoes and potatoes on the grill until they have grill marks on both sides. About 3-4 minutes for each side. Place scallions on the grill until just browned, happens quickly.
Remove vegetables from the grill and chop to desired piece size. I like mine close to 1" cubes.
Mix remaining ingredients in a small bowl with a wire wisk. Pour over salad, and stir. Salt and peppers. Allow salad to rest for 10 - 15 minutes so the potatoes can soak up the dressing and serve warm.
