1 c. quinoa (cooked according to directions)1 onion, sliced8 stalks of asparagus, diced3 small peppers, sliced1/2 c. corn1/2 c. black beans1/2 c. of salsa or fire-roasted tomatoes with chili
Directions

Cook quinoa, according to package directions (I added a 1 T of chicken stock concentrate). As that cooks, saute the onion, peppers, and asparagus until soft. Then add corn, beans, and tomatoes. Once cooked, add quinoa. Garnish with cilantro.

Serving Size: makes 4 1.5 cup servings
