TB's Apple Muffins

Ingredients
1 ½ C whole wheat flour ¼ C milled flax seed (optional but use less milk if no flax)1 tsp cinnamon ½ tsp baking soda¼ tsp baking powder¼ tsp salt1/3 C Splenda (If you prefer sugar, it’s about ¾ C.)1 C shredded, peeled apple (I like Fuji)½ C unsweetened applesauce1 egg½ C milk (1/3 C if no flax)½ C chopped pecans (optional)¼ tsp vanilla
Directions
Preheat oven to 350*.

Mix all dry ingredients. Add everything else & stir well.

Spray muffin tin. Fill cups 2/3 full. If you use the regular size muffin tin (12), it takes about 15-20 minutes to bake. Use toothpick to check centers. The mini muffin tin takes a little less time. The mini loaf pans take a good bit longer.
