Chocolate Flax Microwave Molten Cake

Ingredients
2 tbsp. flax seed meal2 tbsp. Jell-o Sugar Free Chocolate Cook and Serve Pudding dry mix1 tbsp. skim milk1 egg whitepinch of baking powder1 tsp. Smart Balance Light
Directions
Place the Smart Balance in a mug and melt in the microwave (about 15 seconds). Add the flax seed meal, jell-o dry mix, milk, egg white, and baking powder. Mix well!

Microwave for one minute. It doesn't rise that much and stays very rich. You can eat it straight from the mug, or plop it onto a plate. Serve with sugar free Cool Whip, if desired!
