Chicken Lentil Soup for One

Ingredients
2 oz Chicken Breast cubed (We pre-cook and cube it then freeze it so it's ready to go whenever.)1 can low sodium 98% fat free chicken broth1/4 cup dry lentils1 tsp chopped dried onion1/2 TBSP curry powder1/4 tsp salt
Directions
Bring chicken broth to a boil.
Rinse lentils and sort lentils.
Add lentils, onion, and seasonings to chicken broth.
Simmer on low for about 15 min or until lintils are tender.
Add chicken and enjoy!

    This sounds really good and since I love lentil soup and my husband won't eat it, this recipe would be perfect. However.......the amount of sodium listed is well over 1 days worth. Think I would have to find broth much lower in sodium ,or make my own. But sounds like it would be worth the effort. - 5/8/11

    This had a lovely curry flavor. The broth was great, but I was not so crazy about the chicken in it. I would make this again but it is not a favorite. - 10/30/10

    Yeah, stovetops are all so different. Guess your low is lower than mine. :)
