I cup dry Quiona1/3 of a 8 1/4 inch cucumber diced1 average sized roma tomato diced2 Tbsp. garlic minced1 tbsp olicve oil1/8 cup lime juicesalt and pepper to taste
1. Cook Quiona like you would rice, I usually add 2 cups of water to one cup of Quiona let it come to a rapid boil,place a lid on it and let it simmer for 15 minutes (no peeking). Then after the 15 minutes are up I turn off the stove and let it sit there for 5 minutes (still no peeking). After that then you can lift the lid....
2. Take the cooked quiona and place it into a large bowl and refrigerate until cool.
3. add the tomatoes, cucumber and olive oil to the quiona and stir. If you want to add more vegetables to this dish by all means do so, they are the lowest calorie item on the ingredient list.
4. add the garlic, lime juice, parlely, mint, salt and pepper to your preferred liking.
5. Stir well and enjoy.
