Rhubarb Cake

Ingredients
1/2c soya margarine1c brown sugar1 egg white1c almond milk1 tsp Vanilla2c white flour1 tsp Baking Soda2 1/2c chopped rhubarbTOPPING1/4c brown sugar1 tsp cinnamon
Directions
Preheat oven to 350 F.
Cream together first 2 ingred.
Add egg, milk and vanilla. Mix well.
Add flour, baking soda & rhubarb. Mix altogether.
Pour into baking pan.
Sprinkle with topping.
Bake 40 - 50 min
