Chicken, Lemongrass Thai

Ingredients
2 lbs of chicken trimmed2 tbl coconut oil1 8oz can water chestnuts3 stalks celery1 red bell pepper5 shallots
Directions
Chop all veggies except shallots and stir fry in coconut oil. Add in sliced chicken and cook covered until just done. Add in shallots, coconut milk and sauce and simmer for 10 mins.
