Basic Dashi Stock

Ingredients
4 inch long piece of KombuHand full of Bonito Flakes (around 1/2 cup)4 cups water
Directions
Soak the dried kombu seaweed piece in 4 cups of cold water for about 30 to 60 minutes. Put water with kombu in a pot on medium heat. Before water comes to boil remove kombu (when you start seeing tiny bubbles). Bring the water to the boil then switch off the heat. Add a handful of bonito flakes and let it sit for 5 to 10 minutes. Strain through a sieve, pressing out liquid.
