Easy Paleo Chicken Fajitas

8 ounces Chicken Breast2 Large Red Peppers1 Large Red Onion2 tablespoons Olive Oil1/4 Cup Salsa10 Large Lettuce Leaves (for wrapping)
1. Add olive oil to pan on medium-high heat.
2. Add Chicken Breasts (about 8 ounces - 2 servings) and cook through.
3. Remove chicken and set aside to "set".
4. Add sliced peppers and sliced red onion. Saute until desired doneness.
5. Slice or diced chicken and add back to pan. Add desired amount of salsa.
6. Serve over bed of lettuce or wrap with large lettuce leaves.
