Chicken Curry Delight

Ingredients
2- 4 oz. boneless, skinless chicken breast2 slices turkey bacon1 tbs. Honey2 tsp. deli style mustard1 tsp. curry powder1 pinch salt1 tsp. canola or olive oil
Directions
Cook bacon in a saute pan, remove, crumble and keep on side.
In same pan, add canola oil and sear chicken breasts. Transfer to baking pan. Place in 350 degree oven for about 15 min.
While chicken is cooking, mix honey, mustard, curry and salt in a small bowl.
Remove chicken from oven and glaze with honey mixture and top with crumbled turkey bacon. Place back in oven for 10 min. or until chicken has internal temperature of 160 degrees or higher.
Makes 2 servings and is great over basmati rice.
