Tofu Curry

Ingredients
1 package tofu, firm1 package mushrooms, cleaned and chopped to preference1 onion chopped3-4 cloves garlic (optional) 1 package/bunch spinach cleaned and chopped1/2 can coconut milk1 package red curry paste (if using jar use 2-4 ounces depending on desired spiciness) 1/2 tbsp olive oil
Directions
In a pan add garlic, onion, and olive oil. Cook until slightly soft, then add tomatoes and smash. When tomatoes have simmered into a sauce add mushrooms and cook until tender. Add tofu and spinach until spinach is wilted. Add curry paste to taste and coconut milk, simmer till warm. Serve over rice or noodles if desired.
