Peach Pancakes

Ingredients
2 cups whole wheat flour3 tsps baking powder1/4 tsp salt2 tbsps canola oil1 tbsp sugar1 tsp cinnamon1 tsp vanilla1/4 cup egg substitute, liquid1 1/2 cup skim milk1 cup peach, chopped (drain juice from canned peaches)Nonstick cooking spray
Directions
Mix dry ingredients in a large bowl. Combine egg and milk; add dry ingredients and beat until smooth; add canola oil. Add peaches and mix well. Cook on a hot griddle coated with nonstick cooking spray.
