Baked berry pancake

Ingredients
6 eggs1 cup milk1 cup whole wheat pastry flour1 cup frozen or fresh berries1 teaspoon vanilla extract1 tablespoon butter2 tbsp maple syrup
Directions
Preheat oven to 425 degrees. In a oven safe frying pan, melt the butter on low while you prep the rest of the ingredients. Blend eggs, milk, flour and extract with whisk or blender. Pour the mixture into your dish. Sprinkle the berries all over the batter and bake for 15-20 minutes.

Serving Size: Make three generous servings. Could easily be cut in to 6 for smaller portions.
