Country Omelette (veggie friendly)

Ingredients
2 fresh eggs, 4 small spears of asparagus, half a cup of thinly sliced fresh mushrooms, a tablespoon of grated parmesan cheese, 1/4 fresh thinly sliced onion, 1tsp olive oil
Directions
Thinnly slice the mushrooms and onion, fry up in the teaspoon of hot olive oil. In the meantime, beat the two eggs in a cup, add some fresh herbs if you wish (parsley or coriander work very well.) Once the veggies are cooked, add in the beaten eggs and reduce to a low heat. Place the asparagus spears on top and cover. Cook for a few minutes covering the frying pan. Sprinkle over the grated parmesan et voilą!!
