Paleo Crepes

Ingredients
1 cup Tapioca flour3/4 cup coconut milk3 eggs
Directions
scramble eggs in a bowl. Add tapioca flour and coconut milk. Whisk well until completely blended.

Heat non-stick pan over med-high heat. Use a little coconut oil or butter if necessary. pour 1/4 cup batter into pan and swirl it around to coat the pan. When the edges are dry, flip it over for another minute. Place on a plate and top with fresh berries and drizzle with coconut milk and honey.

Serving Size: makes 8 6-inch crepes, 2 crepes per serving
