Spinach & Artichoke Frittata (w/ egg substitute)

4 cups egg substitute1 cup frozen spinach (thawed/drained)8-10 marinated artichoke hearts (finely chopped)Olive oil cooking sprayTo taste:Mrs. Dash or other herb seasoningSaltPepper
Prepare veggies:
Finely chop marinated artichokes.
Thaw, drain and squeeze liquid out of frozen spinach.
Preheat oven to 350 degrees Farenheit. Coat bottom and sides of a 9" x 13" glass baking dish with cooking spray. Whisk together all ingredients in a bowl, then pour into dish. Bake for about 45 minutes, or until egg mixture has puffed, browned on top and pulled away from the sides.
