2 t Extra Virgin Olive Oil1 Lg Carrot, Diced (89 g)3/4 c Sliced Mushrooms (53 g)1/2 t Black Pepper1 1/2 t Red Pepper Flakes1 1/2 t Italian Seasoning1 Lg Stalk Celery, Diced (53 g)1 Sm Spanish Onion, Diced (124 g)1/2 c Diced Red Sweet (Bell) Pepper, Diced (72 g)2 Garlic Cloves, Grated or Chopped to a Paste3 c Tomato Sauce (1 - 29 oz. Can)
Heat a large saucepan over medium heat. Add olive oil, carrot and mushrooms. Cover and cook until carrot is al dente. Add seasonings and stir through, then add celery, onion and bell pepper. Cook just until onion is translucent but not brown. Add garlic, stir and let cook about 15 seconds. Add tomato sauce and stir.
Reduce heat and allow to cook for 20 min. Serve hot over pasta.
