Fried Rice

Ingredients
6 cups cooked brown rice1 1/2 cups frozen peas & carrots, thawed1 cup chopped onion2 cloves garlic, chopped2 tbsp canola oil1/4 cup soy sauce3 eggs
Directions
Heat 2 tbsp oil in large skillet or wok. Add onion, garlic, and peas & carrots to oil. Cook until vegetables are slightly softened. Add 3 eggs and scramble. Add rice and soy sauce. Stir until combined. Cook until warmed through.

Serving Size: makes about 10 one cup servings
