Amazing Mini Cheesecakes

*Reduced Fat Nilla Wafers (8 Wafers), 1.5 serving (remove)Chobani 0% Vanilla Greek Yogurt (6 oz), 1 serving (remove)Neufchatel Cheese, 8 oz (remove)Egg white, 2 serving (remove)Granulated Sugar, .25 cup (remove)*Lemon Curd Wilkin & Sons tiptree preserve, 1 tbsp (remove)Vanilla Extract, .5 tbsp (remove)
Line 12 hole muffin tin with cupcake liner. Place a Nilla wafer in the bottom of each spot.
Beat softened cream cheese, lemon curd, sugar and vanilla. Add yogurt and egg whites and flour. Beat until mixed. Pour into muffin tin.
Bake at 350 for 20-25 minutes until set.
I like to let them cool in the oven then transfer them to the fridge for at least an hour before serving.
