pie crust:1 stick (8 Tbsp.) Earth Balance margarine1 tsp. vanilla extract1 medium egg1 1/2 cups whole wheat pastry flour1/4 cup honeyfilling:1 1/2 pints blueberries1/4 cup xylitol2 Tbsp. cornstarch
mix ingredients for crust together. Divide dough in half. Roll out crust between two sheets of plastic wrap (sprinkle dough with flour so it shouldn't stick) Place rolled out dough into 8" pie pan.Mix together blueberries with xylitol and cornstarch. Put filling ingredients into pie pan and roll out second piece of crust and place on top. Crimp the edges of the crust. Bake in preheated oven until crust is lightly browned about 1/2 to 3/4 hours.
