Ingredients
56g whole wheat flour1 tsp (olive) oil2 tsp brown sugar (or: maple syrup, molasses)1 tbsp baking powder1/2 tsp vanilla extractcinnamon and other spices to taste1/2 cup "milk" (soy, almond, coconut, etc.; calculated for coconut at 80 calories per cup)Optional (*not* included in the nutritional information):- an ounce (28g) of blueberries- 14g (80-100 calories) chopped nuts (especially: walnuts, almonds, pecans)
Directions
0. Heat pan or griddle over medium heat.
1. Mix dry ingredients (flour, spices, baking powder)
2. Mix wet ingredients ("milk", sugar, oil)
3. Blend wet and dry until smooth, but do not over-stir.
4. Grease hot skillet/griddle.
5. Drop ladles of batter onto hot pan; turn once after bubbles crest and edges begin to brown.

Serving Size: makes 2 medium pancakes or 4 miniature pancakes
