Incredibly Low Cal (!) Beef and Mushroom Barley Soup

Ingredients
Mushrooms, fresh, 2 lbs. Onions, raw, 1 large Yellow Peppers, 1 pepper, large Garlic, 3 cloves (we're very fond of garlic)Celery, raw, 4 stalk, large Beef, top sirloin, 1 lb. cut in bite sized piecesOlive Oil, 1 tbsp *Chicken Broth - Swanson low sodium, 8 cup (2 cartons)Barley, pearled, raw, 1.5 cup
Directions
Chop all vegetables and press garlic. Combine vegetables, garlic, broth, barley, and 2 cups water in a large stew pot. Bring to a boil and then reduce to simmer for 45 minutes. In the mean time brown beef in oil and add to pot.
