Creamy Barley Soup

Ingredients
1 cup pearl barley1 onion, finely chopped1 T. butter8 cups chicken broth2 carrots, sliced3 celery ribs, sliced1 cup sliced mushrooms1 tsp salt1/2 tsp pepper1 cup half and half
Directions
Saute onion in butter under tender.

In a soup pot, add barley, broth, carrot, celery, mushrooms, and onions. Add salt and pepper. Bring to a boil, cover, simmer for one hour.

Add half and half and heat through.

Serving Size: Makes six one bowl servings
