Chocoate strawberry mousse

3/4 heavy cream1/2 tsp vanillaStevia (amount to equal 4 servings)1/3 cup plain non-fat greek yougurt1 Tbl Cacao power or cocoa powder unsweetened1 teaspoon melted coconut oil2 cups fresh sliced strawberries
Whip heavy cream in electric mixer for about 1 minute. Mix in vanilla and stevia extract until stiff peaks form. Set aside. Melt coconut oil for about 10-15 seconds in microwave, then mix the cocoa powder in and stir until well mixed. Now add to half of cream mixture. Refrigerate both halfs in the refrig for 15 minutes.
Remove bowls from fridge and add yogurt to the non chocolate half. Whip this with the electric mixer for about 1 min. Gently fold the chocolate half into the mixture. Fill bowls with stawberries (1/2 cup each), dollop with 1/4 mousse mixture. Refrigerate 1-2 hours then serve.
Serving Size: Makes 4 servings of about 3/4 cup
