Beef Fajitas

Ingredients
1 pound beef cut in strips (or chicken)1 small red onion1 red sweet pepper2 cups fresh mushrooms, sliced2 cups shredded cheddar cheese6-8 whole wheat wraps (depending on size)Barbeque sauceRanch dressingHerbs and spices to taste
Directions
Makes 6-8 Fajitas: Preheat oven to 300 degrees F

Marinate the beef in the BBQ sauce for 6-8 hours (if your meat is a cheaper cut, ensure the sauce has some kind of acidic ingresient like lemon/lime juice or a touch of vinegar to break down the meat and make it more tender)

-Saute the meat in 2 Tbsp. olive oil
-Remove the meat and saute the vegetables in the liquid from the meat.
- Spread a small amount of Ranch (or whatever you prefer) dressing on each wrap
- Add 2 Tbsp. of meat and a mixture of veggies to the wrap and cover with shredded cheese.
- You can add more sauce if desired but not too much or the wraps will be soggy
- Fold up one end of the wrap and then wrap one side over and roll up
- Place on a lightly oiled baking sheet and cook until warm and the cheese is melted
