Feta, butter lettuce, spinach, mushrooms, black beans, onion, mushroom, quinoa, Fresh Salsa Dressing from "Appetite for Reduction".
Throw the stuff in a bowl, lettuce first. Rip up the lettuce so that you aren't manhandling giant chunks with your fork. Go buy or check out "Appetite for Reduction" from the library and make the dressing. Congratulations! Salad achievement unlocked!
