broil lightly red peppers, while broiling to soften be sure to turn. Saute diced onion 3-4 minutes, add garlic, sauté 1-2 more minutes, add mushrooms and continue to sauté a minute or two more. Add spinach or arugla and a small squeeze of lemon juice and salt and pepper to taste. Once the spinach starts to wilt remove from heat and fold in the cheese and beans. Place into the peppers. Place the stuffed peppers in a baking dish with the one cup of sauce and allow to simmer for about 5 minutes. Enjoy.
