Sheary's Chicken Fiesta

Ingredients
3 boneless, skinless chicken breasts1 c salsa1 t cumin powder1/2 packet taco seasoningsalt to taste (optional)2 cups cubed zucchini2 c fresh spinach1 c shredded carrots1 can black beans, rinsed and drained1 c frozen corn16 corn tortillas3/4 c grated monterey jack cheese2 c shredded romaine lettuceextra salsasour cream (optional)
Directions
Place chicken (I had 3 frozen boneless, skinless chicken breasts, 1 cup salsa, 1 t cumin and 1/2 packet taco seasoning in crock pot. Cook on low 7 hours. Chop zucchini and carrots and add to chicken mixture. Drain and add black beans and corn. Rough cut spinach and add. Turn crockpot to high and cook 1 hour. Spray tortillas with canola oil spray and toast in oven. Place 1 tortilla on plate, top with 1/2 c chicken mixture, 1 T shredded monterey jack cheese and repeat. Top with shredded lettuce and some salsa. You could also add a little sour cream on top.

Serving Size: Makes 8-1 cup servings with 2 tortillas
