Bison & Bean Meat Loaf Muffins

1 lb. Ground Bison/Buffalo meat (or any extra lean ground meat)1 can Great Northern Beans (or your favorite beans)1 egg1/4 C Panko bread crumbs1 C Fresh, chopped mushrooms1/2 C Shredded, fresh carrot1 onion, dicedSalt and pepper to preference (or my favorite Durkee Kansas City Style Steak Seasoning)Barbecue Sauce (to brush onto the top of each muffin)
1. Spray a cupcake pan with cooking spray. Preheat the oven to 375F.
2. Prepare and combine all of the ingredients except the BBQ sauce in a large bowl (mash the beans with a potato masher before adding).
3. Divide up the meat mixture into the 12 cup tray evenly. Bake at 375 for 15 minutes.
4. Top each meat muffin with a portion of BBQ sauce. 5. Allow to cook for another 5 minutes or until the BBQ sauce starts to bubble. Cool & serve.
Serving Size: Makes 12 single serving "meat muffins"
