Brown Sugar cookies

Ingredients

2 cup flour2 tsp baking soda.5 tsp salkt.5 tsp cinnamon.5 tsp ginger1.5 stick unsalted butter (or 12 tbsp)1.25 cup dark brown sugar1tsp vanilla1 large egg
Cream butter and brown sugar med speed mixer for 3-5 min or until light and fluffy.
Whisk dry ingredients together in separate bowl.
Scrape down butter/sugar mixture then add vanilla and egg. Beat again about another min.
Add all dry ingredients and mix until dough forms. Finish mixing w/ spatula until incorporated.
Cover w/ plastic wrap and refrigerate for 30 min. (if adding toffee bits or chocolate chips do before this)
Drop onto parchment covered cookie sheet and bake at 350 for 10-12 min. Let rest on sheet for 5 min. before removing to rack to cool completely.
